I had one yellow squash sitting in my produce bowl, that I needed to do something with before I left tomorrow for my next trip.

I turned it into these lovely pancakes- grating it in a bowl, squeezing, and then mixing with a little egg, flour, and bread crumbs (well I did not have any breadcrumbs, so I crunched up some crackers).

There were da bomb.

This is the biggest one yet that is growing on my 2 year old plant. It was moderately sweet, but also slightly bitter, if that makes any sense.
